Meat and poultry transportation, weather long and short distance has become a subject of attention by regulators and health authorities. Today exports of red meat from Argentina, Brazil and Australia use systematically strict quality control as long distances increase the risk of breaking the cold chain particularly on transit sites. New guidelines are however imposing stricter control within the same continent as break on the cold chain does not only jeopardize health and quality of the meat but also influences the shelf life of the product. Article 1 (a and c)

“Food business operators shall, as appropriate, adapt the following hygiene measures:

EN 853 Transport of Frozen fishery products:

Chapter VIII part 1C :
“Frozen fishery must be maintained during transport at an even temperature of not more than -18°C in all parts of the product, possibly with short upward fluctuation at no more than 3°C.”
